aesars Resort Bluewaters
Dubai is the slightly more
modern, contemporary sister
of the neighbouring Palace.
While the Palace has grand sculptures
of the namesake Roman emperor, the
Resort features neon
illustrations and quirky
artworks.
Paru, which is
Japanese for Pearl,
sits on the rooftop of
the resort and is the
second Dubai venture
for celebrity Michelin-
starred chef Akira Back.
The first area of the
restaurant is an outdoor terrace,
which to our surprise is bustling with
diners, despite only having opened a
couple of weeks prior. We’re shown a sofa
table under the shadow of Ain Dubai,
overlooking the glistening Arabian Gulf
and Dubai Marina’s ever-present skyline.


To the left is the main restaurant and
bar, which has a white origami-style
trellis travelling along the ceiling and
back wall, allowing a neon LED light
to glow through. The final area is the
lounge terrace, where guests can enjoy a
cocktail and shisha, overlooking the hotel’s
stunning pool deck.
If you’re feeling adventurous you can
opt for the modern omakase (Japanese
for ‘I’ll leave it up to you’) menu, where
the chef will personally choose five
courses (Dhs450) or seven courses
(Dhs750) for you to sample.

Woong Kim for yourself as
he often likes to visit tables
for guests’ feedback.
Our omakase tasting
begins with wagyu beef
tataki (Dhs140). The tender
slices of wafer-thin beef are
lightly infused with subtle truffle
flavours. Alongside it is a refreshing
seaweed salad (Dhs60), which is both
crunchy and sweet to complement the
savoury beef discs.
Our waitress is enthusiastic and
knowledgeable, keen to share insider
information as each plate or glass arrives.

Next, we’re presented with a sushi
tray named Paru house (Dhs105). The
generous selection offers a mix of nigiri
and sashimi from salmon and tuna to
scallop and shrimp. Delicately prepared, it
makes for a light and enjoyable starter.
Our mains include a juicy wagyu ribeye
(Dhs295), which had been sliced into
bitesize strips and topped with flavourful
mushrooms, and the grilled Scottish salmon
(Dhs120), that was slightly over-salted.
If you’re a fan of citrus desserts, you need
to try the aptly named ‘Lemon’ (Dhs40) for
your final course. Crafted into the shape
of the fruit, just take a spoon to crush
through the sweet cream to reach the gooey
Japanese mochi ice-cream centre.
If you’re searching for one of those ‘I
feel like I’m on vacation’ moments, cross
over to the second terrace after your meal
for a cocktail or pot of tea and take in the
stunning night-sky views.
