Kleftiko (slow-cooked lamb)
Originating from the mountains of Greece, kleftiko is a slow-cooked lamb shoulder with feta
mash and mint jus. The best way to prepare it is to make sure the lamb is cooked and shredded,
before being rolled into a log. That way every bite is the same.
