JAMAICAN JERK
PRAWNS WITH
MANGO SALAD
These spicy Jamaican jerk prawns pack a punch
but when partnered with sweet mango and cooling
avocado, they’re a BBQ dream. With a quick
marinate time and even quicker cooking time,
these little beauties are healthy and will certainly
impress guests. Top level health statistics, per
serving (two skewers with salad)
METHOD
- Skewer raw prawns, approximately four per skewer.
- Combine all the marinade ingredients. For a gentle heat, use one teaspoon of
seasoning; to kick it up a notch, use two teaspoons. Brush the marinade over the
prawns making sure each one has a good coating. - While the prawns are marinating, prepare the salad. Slice the avocado and mango into
bitesize chunks and half the cherry tomatoes. Mix in finely chopped coriander to taste. - Heat the BBQ.
- Once the prawns have had half an hour to marinate, place them on the BBQ. They will cook
very quickly, only needing three minutes either side. - Once cooked, serve with the mango salad and enjoy!

1-2 tsp The Gym Chef
Jamaican Jerk Seasoning
400g raw prawns
2 tsp honey
1 tbsp soy sauce
1 tbsp olive oil
Juice from half a lime
Mango salad
1 mango, cut into bitesize
chunks
1 avocado, cut into bitesize
chunks
A handful of cherry tomatoes,
halved
A handful of coriander, finely
chopped
