ingredients ... but before you
start, make sure you have the
essentials in your store cupboard.
STORE CUPBOARD
Coconut oil
Himalayan salt and
black pepper
Extra-virgin olive oil
SUN-DRIED TOMATO LAMB CHOPS WITH
BRUSSELS SPROUT MASH
SERVES 4
YOUR 5 KEY
- 400g Brussels sprouts
- 1 cup coconut cream
- 1 red onion, sliced into
wedges - 4–6 lamb loin chops
- 40g sun-dried tomato
in a vinaigrette,
blitzed until smooth
1 tbsp coconut oil
- Put the Brussels sprouts in
a pot, cover with water and
cook until soft. Drain very
well. Place in a food processor
with coconut cream and blitz
until smooth then season well.
Set aside and keep warm. - Heat a frying pan and
add the coconut oil. Add
the onion and sauté until
softened then remove from
the pan and set aside. - Heat a griddle pan,
season the lamb chops and
cook them until browned on
both sides and cooked to
your liking. - To serve: Top the lamb
chops with blitzed sun-dried
tomato mixture and serve with
onion and mash.
