ingredients ... but before you
start, make sure you have the

essentials in your store cupboard.


STORE CUPBOARD


Coconut oil
Himalayan salt and
black pepper
Extra-virgin olive oil

SUN-DRIED TOMATO LAMB CHOPS WITH
BRUSSELS SPROUT MASH
SERVES 4

YOUR 5 KEY



  1. 400g Brussels sprouts

  2. 1 cup coconut cream

  3. 1 red onion, sliced into
    wedges

  4. 4–6 lamb loin chops

  5. 40g sun-dried tomato
    in a vinaigrette,
    blitzed until smooth


1 tbsp coconut oil


  1. Put the Brussels sprouts in
    a pot, cover with water and
    cook until soft. Drain very
    well. Place in a food processor
    with coconut cream and blitz
    until smooth then season well.
    Set aside and keep warm.

  2. Heat a frying pan and
    add the coconut oil. Add
    the onion and sauté until
    softened then remove from
    the pan and set aside.

  3. Heat a griddle pan,
    season the lamb chops and
    cook them until browned on
    both sides and cooked to
    your liking.

  4. To serve: Top the lamb
    chops with blitzed sun-dried
    tomato mixture and serve with
    onion and mash.
