mince. Made entirely from sunflower seeds,
this has 50% protein and 20% fibre per

All you need to do is rehydrate the sunflower
mince with water, and use accordingly in
traditional mince recipes, such as bolognese

We spoke to Jacques Cop, the founder of raw vegan chocolate
company, CocoCaravan, about the rise in the business, and found
out why we should try the brand’s vegan Easter eggs this year!

Q: What encouraged you to create a business in vegan chocolate?
A: I had been working as an ecologist in Australia for over 10 years when
I had an accident, which meant that I could no longer work in the ield.
The many sleepless nights that followed resulted in a lightbulb moment


  • I’m going to make chocolate with caramel and nuts. The vegan aspect
    came weeks later. We were veggie at the time, but when I started in
    Melbourne, our friends’ children were severely lactose intolerant, and
    I wanted to make something for everyone, but especially for those who
    often miss out the most.


Q: What is special about your new Bean To Bar collection?
A: We start with the beans that we select from small landholders,
which I buy via social and environmental projects. On these farms
you will ind old and rare varieties of cacao beans with unique lavour
notes; and by not roasting them there is no added bitterness, and the
lavour is preserved. Finally, I use coconut blossom sugar to sweeten it.
The nectar for the coconut lowers is less intense than normal sugar
and gives a wonderful aftertaste.

Q: How do your Easter eggs difer from other vegan alternatives
on the market?
A: Where to start? The chocolate for the eggs is made with liquid
coconut blossom nectar and then tempered perfectly to make
a smooth melting chocolate. On the inside, you’ll ind my signature
caramel made from cashew nut, coconut and coconut sugar.
They’re also made in the UK, wrapped plastic-free, and are free
from gluten and reined sugars.
