Cheese to please

The texture of this delicious cheese is
a real triumph – despite looking like a
hard cheese at irst sight, you can really
sink your teeth into ‘Rachel’; its semi-
hard bite turns creamy as you chew.
It has a rich and nutty lavour, without
the overpowering taste that some
goat’s cheese has. ‘Rachel’ contains
vegetarian rennet, so don’t be put of
by its washed rind!
2 TESCO WENSLEYDALE CRANBERRY
CHEESE 200G, £2, TESCO.COM
This creamy cheese packs a punch
with sweetened dried cranberries for
an extra tang. It easily spreads on top of
crackers – savoury seeded ones work
really well to cut through the sweetness.
The Wensleydale is a great addition to
any cheeseboard, and this fruit-studded
version certainly looks the part.
3 DELAMERE DAIRY GOAT’S CHEESE
PEARLS 100G, £1.85, OCADO.COM
I was really surprised by how
lavoursome these little balls were.
I wouldn’t think of putting these
on a cheeseboard, but they actually
spread quite easily on crackers.
I’d say that they’re better suited
to sprinkling on salads, or for
melting on pizzas.

Blue cheese is always a hit with me,
but this distinctive veined Shropshire
Blue is a real treat. The colour is
striking, with a russet toned interior
which makes a change from other
blues you might add to a cheeseboard.
The cheese has a irmer texture than
Stilton, so it doesn’t crumble quite as
much, but it has a similar lavour: it’s
perfect with grapes and crackers.
