Patatas Bravas

This traditional Spanish tapas
dish is the perfect way to revive
leftover potatoes and create a
small sharing plate. If you don’t
have any leftover boiled potatoes,
tinned new potatoes work well in
this recipe. Simply drain and rinse
them thoroughly, so the flavours
absorb into the potatoes. This
recipe is also suitable for freezing.

Serves 4
Ready in 15 mins

3 tbsp sunflower oil
1 red onion, peeled and
finely chopped
3 garlic cloves, peeled
and crushed
2 tsp sweet paprika
1 tsp smoked paprika
1 tsp mild chilli powder
400g tin chopped tomatoes
½ tsp sugar
300g leftover boiled potatoes,
cut into small cubes
generous pinch of sea salt flakes
handful of flat-leaf parsley,
