Mediterranean Avocado
Hummus with Pitta
Bread Crisps

Serves 2
Ready in 7 mins

1 avocado, pitted and peeled
225g tin of chickpeas, drained
10g coriander
½ garlic clove
90ml olive oil
60ml lime juice
1 tsp cumin
8 pitta breads, sliced into
thick strips
2 tbsp paprika

1 Preheat the oven to
180C/350F/Gas 4.
2 Place the avocado, chickpeas,
coriander, garlic, olive oil, lime
juice and cumin in a food
processor and blitz until smooth.
3 Season with salt and pepper,
and set aside.
4 Place the pitta bread strips on
a baking tray, then drizzle with
olive oil and paprika.
5 Bake until the bread is crisp,
for around five minutes, and
serve with the avocado hummus.

the University of Leeds highlighting the importance of increasing our five-a-day has
brought this to the forefront of our minds. The study, of around 50,000 people, has
found that cutting out fruit and veg altogether over the course of seven years has more
of an impact on our mental health than being widowed, and those who eat more than
10 portions of fruit each day experienced the same positive boost to their wellbeing as
getting a new job. The findings further prove claims that getting more fruit and veg into
our diet not only benefits our physical health, but our mental wellbeing, too. So bear
this in mind and add an extra portion of veg to your dinner tonight!
