“If you go away or want to take a break, you need to
rest the Mother in a sugar-tea solution in the fridge.“
For the sugar-tea solution:
250ml boiling filtered water
4 black tea bags
220g raw or white sugar
250ml cold water
1 Pour the boiling water into a heatproof bowl or
teapot and add the tea bags. Steep for one minute
or so, then discard the tea bags.
2 Add the sugar and stir to dissolve.
Top up with the cold water.
3 Pour the sugar-tea solution into
a container and add the kombucha
Mother. Seal and place in the fridge
for up to three months.
