Strawberry
& almond
sweet frittata

Ingredients


  • ½cupwhitequinoa,rinsed
    -^1 ½cupswater

    • ½cupskimmilkor
      almondmilk

      • 1 mediumredapple,
        gratedcoarsely

        • ¹⁄^3 cupplainyoghurt

          • 1 tbsprawhoneyor
            puremaplesyrup

            • 1 mediummango,sliced

              • 1 tbspgojiberries
                -^2 tbsppistachios,roasted,
                choppedcoarsely














Method
1.Combinequinoaand
thewaterinasmall
saucepan,bringtothe
boil.Reduceheat,simmer,
covered,for^10 mins.Add
milk,cook,covered,fora
further^5 minsoruntilthe
quinoaistender.Stirin
appleuntilcombined.
2.Placeyoghurtandhoney
inasmallbowl,stirgently
toswirlthrough.
3.Serveporridgetopped
withthemangoslices,
gojiberries,pistachiosand^
honeyyoghurt.

Quinoa porridge


Serves: 6

Ingredients


  • 250gstrawberries,hulled


• (^1) tbspcoconutsugar, plus
2 tbspextra



  • 1 vanillabean

  • 6 eggs

  • ⅓cupalmondmeal

  • 10gbutter

  • 100gfirmricotta,crumbled
    coarsely

  • ⅓cupdry-roastedalmonds,
    choppedcoarsely

  • Honey,chiaseeds, to serve
    (optional)


Method
1.Thinlyslicehalfthestrawberries,
cutremainingstrawberriesin
half.Combinehalvedstrawberries
with coconut sugar in a small bowl.

Reserveslicedstrawberries.
2.Splitvanillabeanlengthways,
usingthetipofaknife,scrape
theseeds.Reservevanillapod
foranotheruse.
3.Placevanillaseeds,eggs,
extracoconutsugarandalmond
mealinamediumbowl,whisk
untilcombined.
4.Preheatgrilltohigh.
5.Meltbutterina24cmnon-stick
ovenprooffryingpanovermedium
heat.Addeggmixture,topwith
slicedstrawberries,ricottaandhalf
thechoppedalmonds.Reduce
heattolow,cook 8 minsoruntilhalf
set.Placepanundergrillafurther
8 minsoruntilricottaislightly
brownedandmixtureisjustset.
6.Topwithhalvedstrawberries
remaining and
almonds.Drizzlewith
honeyandsprinklewithblackchia
seeds, if using. Serve immediately.
