Light the way
Gorgeous lanterns add
a glow to outdoor dining

There’s nothing as summery and
scrummy as a perfectly ripe peach,
a fruit that goes beautifully with savoury flavours. The
British peach season runs from now until September, and
the good news is that, as well as being delicious, they are
also brimming with vitamin C and potassium. Choose fruit
that gives slightly when pressed with your thumb.

● Mix together 1 tbsp of soy
sauce and 1 tbsp of orange
juice with 1 tsp of brown
sugar and drizzle it over
2 peaches that are halved,
de-stoned and sliced.
● Place a griddle pan
on a high heat and sear
the peaches, along with
1 courgette (sliced into
long strips), and 2 packs of
Cauldron Teriyaki Tofu pieces
for 3-4 minutes, until charred.
Once cooked, set aside.

● Mix together 30g of rocket,
15g of edamame beans
and 1 pack of pre-cooked
quinoa, transfer to a serving
dish and top with the
peaches and tofu.
● To make the dressing,
whisk together 2 tbsp of
orange juice, 1 tbsp of
orange zest, 1 tbsp of
sesame oil and ¼ tsp of
pepper, until combined.
● Pour the dressing over,
garnish with herbs and serve.
