Flapjacks


These chewy bars are great energy boosters and very simple to make, using only a few pantry ingredients.

1 Preheat the oven to 300°F (150°C). Lightly
grease the base and sides of the cake pan.

4 Stir in the oats, making sure they are well
coated, but do not over-work the mix.

7 To neaten the surface, dip a tablespoon in
hot water and use the back to smooth the top.

2 Put the butter, sugar, and syrup in a large
saucepan and place over medium-low heat.

5 Spoon the oat mixture from the saucepan
into the prepared pan.

8 Bake for 40 minutes or until evenly golden;
you may need to turn the pan in the oven.

3 Stir constantly with a wooden spoon to
prevent burning. Remove from the heat.

6 Press down firmly with the wooden spoon
to make a roughly even layer.

9 Leave to cool for 10 minutes, then cut into 16
squares, or 20 rectangles, with a sharp knife.

2 tbsp corn syrup
33 ⁄ 4 cups rolled oats
