FISHAND CHIPS WITHTARTARE SAUCE

(enoughfor4)
sunfloweroil fordeep-frying
8potatoes,cut into thin
fingers (rinse them and use
with the peel)
FORTHETARTARESAUCE
½cup mayonnaise
1tablespoon canned capers
2tablespoons pickled
cucumber,finely chopped
1hard- boiled egg,finely
chopped
1tablespoon fresh parsley
2tablespoons chopped onion
FORTHE FISH
1¾ cup of flour
3teaspoons baking powder
apinch of salt
1can (330 ml) beer
4hake portions of 300 g
each, with or without skin
and bones

1Cookthe chips.Heatthe oil in
alargepot until it immediately
starts bubbling whenyou
immerseapotatochip.Fry the
chipsinthe oilforabout 10
minutes until they getalovely
colour.Ifthe oil smokes,it’stoo
hot.Remove thecooked chips
withaslotted spoon and drain
them onkitchen paper.Keep
aside.
2Makethe tartaresauce.Mix
the mayonnaise,capers,
pickled cucumber,egg,
parsley and onion, and
season with salt and pepper.
3Cookthefish.Mix1½cups
of flour with the baking
powder andapinch of salt
and stir in the beer with a
fork.Don’t stir out all the beer
bubbles–this batter should
rather have afew lumps.
4Seasontherest of the flour
(¼ cup)with salt and pepper.Roll
each fish fillet in the flavoured
flour until it’s covered and shake
off theexcess flour.
Dip each pieceoffish into
the batter and allowtheexcess
batterto drain.Frythefish
fortwoto fiveminutes in a
saucepan until golden brownon
both sides.Put thecooked fish
onkitchen paperto allowthe oil
to drain.
5Placethe chips back in the
oil and fryuntil golden brown
and crisp.
