BEEF SHORT RIB CURRY
Slowly,but surely

This curryismild but rich–amasterful potjie
you’ll want tomake often.

Ingredients
(enoughfor4-6)
1kgbeef shortribs,cut into portions
4tablespoons oliveoil
1onion, finely chopped
2garlic cloves,finely chopped
2tablespoons mild curry powder
1bayleaf
1teaspoon dried thyme
1ℓbeef stock
10 dried prunes
2carrots,chopped
4potatoes,cubed
4tablespoons chutney
salt and black pepper,totaste

Here’show
1Searthe beef in batches inapotjie. Add
2tablespoons of oilto get the process started
and quickly sear the meatonahigh heatsoit
does not drawwater.Set aside.
2Sautéthe onions and curry powder in the
same pot until soft. Addthe meattothe pot
with the thyme,bayleaf,beef stock,prunes,
carrots and potatoes.Cover and simmerover
moderateheatfor 2hours or until the meatfalls
off the bone.
3Seasonto tastewith salt and black pepper,
and servewithrice.

BOBOTIE ENCHILADAS
Allwrapped up

This recipe is super simple: simply fill
wraps with bobotie minceand bakein
apotjie till hot.Then, sitback and enjoy.

Ingredients
(enoughfor4)
1onion, finely chopped
2garlic cloves,finely chopped
1tablespoon strong curry powder
1tablespoon oliveoil
500 gbeef mince
2tablespoons peach chutney,plus
extrafor serving
2tablespoons dessicatedcoconut

1teaspoon turmeric
1bayleaf
2tablespoons apple cider vinegar
salt and black pepper,totaste
6wraps
1cup Greekyoghurt
1cupgratedcheddar cheese

Here’show
1Frythe onion, garlic and curry
powder in the oliveoil until soft.
Addthe mincepiecemeal and frytill
golden brown.
2Addthe chutney,coconut,turmeric,
bayleaf and vinegar and simmerfor
20 minutes.Tasteand flavour with salt
and pepper.

3Filleach wrap with1tablespoon
yoghurt andagoodfewdollopsof
mince.Roll upthe wrapsandpack
in aflat-bottomedpotjie or cast-iron
pan. Spoon therestof theyoghurt
over thecentre of thewrapsand
sprinkle thecheeseevenlyover
everything.
4Coverand placethe potjie or pan
over moderatecoals.Spoon somecoals
on the lid and bakefor15minutes.
Servewarmwithextrachutney.
