whichisoftenattributedtoaubiquitoussnack
calledBamba,madeof puffedpeanut butter.
Richandeasyforsmallmouthstosuckon,
IsraelibabieshavebeenfedBambaas oneof their
firstsolidfoodsforgenerations.

To make20-24 cookies,
dependingon your piping

•70g natural peanut
butter(no added
sugaror oil)
•200g whitechocolate,
chopped
•180gdark brownsugar
•2eggs
•140gstrong
wholemeal flour
•½tspbakingpowder
•50g peeledpeanuts
•50g whitechocolate,
chopped
•Small sprinkleof seasalt

1 —Place the peanut
butterand white
chocolatein asmall
saucepanon averylow
heat and stir until theyare
meltedand combined.

2 —Meanwhile,mix
the sugarwith the
eggsand whiskwith an
electricmixer to avery
strong, fluffysabayon.

3 —Fold the melted
chocolateinto the egg
mix and add the flour
and the bakingpowder.
Mix well to combine.
Transfer to apipingbag
and rest for20minutes
beforepipingout little
moundsabout5cm in
diameter,spacedout
across acoupleof lined
trays(theywill spread).

4 —Top each mound
with acoupleof
peanuts, afew chunksof
choppedchocolateand
asprinkleof seasalt.

5 —Restfor another
20 minutes.

6 —Heatanovento
180C (fan assist)and
bakefor six minutes.

7 —Rotate the tray in the
ovenand bakefor another
four minutes–they
shouldform anice shiny
crustall over. Remove
and let themcool on the
traysbeforeeating.
