Polentamuffinswith

MAKES 18 PREP AND COOK TIME30 MINUTES


¾cup(110g)plainflour,sifted
⅓cup(55g)instantpolenta
2 teaspoonsbakingpowder
2 tablespoons salted capers, rinsed and
drained
2 tablespoonschopped flat-leaf
parsleyleaves
1 teaspoonfinelychopped dill
½cup(125ml)milk
1 tablespoon olive oil
1 egg
150gsmoked salmon, cut into 2cm strips
toserve
120gsourcream,toserve
salmonroeandfreshdilltogarnish


1 Preheatovento180°C(160°Cfan-forced).
Greaseminimuffinpans(30mlcapacity).
2 Combinetheflour,polenta,baking
powder,capers,parsleyanddillin a
bowlandmixwell.Seasonwithsome
freshlygroundblackpepper.
3 In a jug,whisktogetherthemilk,oil
andegg.Addtothedryingredientsand
foldtogetheruntiljustcombined.Spoon
about 3 teaspoons of the mixture into


thepreparedmuffintinandbake
for 20 minutes. Remove from oven
andcool.
4 Toserve,topwithsalmon, sour
cream,androeanddill.
Unfilledmuffinssuitabletofreeze.
Notsuitabletomicrowave.

Wiltedgreensandgoats’
cheesesquares
MAKES 20 PREP AND COOK TIME 45 MINS

2 tablespoonsextravirginoliveoil
1 largeleek,trimmedandchoppedfinely
1 bunch(750g)silverbeet,stems
removed,leavesfinelychopped
½cupchoppedflat-leafparsleyleaves
100ggoatscheese,crumbled
4 eggs,beatenlightly
¼cupgratedparmesan
¼cup(60ml)pesto

1 Preheatovento180°C(160°C
fan-forced).Greaseandlinea 20cm
squarepanwithbakingpaper.
2 Addtheoliveoilandleektoa large
fryingpan,cookovera mediumheat
for5 minutesoruntilsoftened.Add
thesilverbeet;cook,stirringfora further
10 minutes or until it is completely wilted.

Remove from heat;
cool.
3 Drainthesilverbeet
mixturein a largesieve
toremoveanyexcess
liquid,thentransferto
a mediumbowl.Addthe
parsley,goats’cheeseandeggs
andstirtocombine.Seasonwith
saltandfreshlygroundblackpepper.
4 Pourmixtureintopreparedpan,
sprinklewithparmesanandbakefor
20 minutesoruntiljustsetandgolden
brown.Removefromoven;cool.
5 Toserve,cutinto 20 squaresand
topeachwith about half ateaspoon
ofpesto.
Suitabletofreeze. Not suitable
to microwave.
