Slow cooking


Simple beef stroganoff
SERVES 4 PREP TIME 15 MINUTES
COOK TIME 9 HOURS 45 MINUTES

FIVE INGREDIENTS
1.5kg beef chuck steak
12 red shallots (300g)
300g small Swiss brown mushrooms
1 tablespoon sweet paprika
⅓ cup (80g) crème fraîche
STAPLES
1 tablespoon extra virgin olive oil
sea salt flakes
freshly ground black pepper

1 Trim beef to remove excess fat;
cut into 4cm pieces.
2 Heat oil in a 5-litre (20-cup) slow

cooker on ‘sear’ (HIGH) setting.
Cook beef, in batches, turning,
for 5 minutes or until well browned.
3 Peel shallots. Add shallots,
mushrooms (halve mushrooms,
if you like) and paprika to slow
cooker; cook, stirring, for 2 minutes
or until fragrant. Return beef to
cooker. Add ½ cup (125ml) water.
Adjust setting to LOW; cook,
covered, for 9 hours 30 minutes.
4 Stir in crème fraîche; cook for
a further 1 minute or until heated
through. Season to taste. Serve
drizzled with extra crème fraîche
and sprinkled with extra paprika,
if you like.

Veal with balsamic
glaze
SERVES 6 PREP TIME 5 MINUTES
COOK TIME 6 HOURS 15 MINUTES

FIVE INGREDIENTS
6 pieces veal osso buco (1.2kg)
2 tablespoons plain flour
2 cloves garlic
2 tablespoons fresh sage leaves
1 cup (250ml) chicken stock
STAPLES
2 tablespoons olive oil
½ cup (125ml) balsamic vinegar
sea salt flakes
freshly ground black pepper

1 Heat oil in a 5-litre (20-cup)
slow cooker on ‘sear’ (HIGH) setting.
Toss veal in flour to coat; shake off
excess. Cook veal, in batches, for
5 minutes until browned on both sides.
2 Thinly slice garlic and chop sage.
Add garlic and sage to slow cooker;
cook, stirring, until fragrant. Add
vinegar; boil, uncovered, for 2 minutes
or until reduced by half. Stir in stock.
3 Adjust setting to LOW; cook,
covered, for 6 hours. Season to taste.
4 Scatter with extra sage, if you
like; serve.
Store it: Refrigerate in an
airtight container for up
to 3 days, or freeze for up to
3 months; thaw in the fridge.
