Basic mash
SERVES 4 PREP+ COOKTIME 30 MINUTES
Place1kgcoarselychoppedpotatoesin a mediumsaucepanwith
enoughcoldwatertobarelycoverthem.Boilovermediumheat
for15 minutesoruntilpotatois tender;drain.Returnpotatotopan;
mashuntilsmooth(orusea potatoricerormouli).Add40gbutter
and¾cuphotmilk;foldintomashuntilsmooth.Seasontotaste.
Top with a little extra butter and season with pepper, if you like.
Sweetpotato mash
SERVES 4 PREP+ COOKTIME 30 MINUTES
Boil,steamormicrowave500geachcoarselychoppedpeeled
orangesweetpotatoesandpotatoestogether,untiltender;
drain.Mashvegetables.Combine¼cupchickenstockand40g
butterin a smallsaucepanovermedium-highheatuntilbutter
is melted;stirintomashuntilcombined.Seasontotaste.Top
with a little extra butter and season with pepper, if you like.
Mushy peas & mint
SERVES 4 PREP+ COOKTIME 10 MINUTES
Boil,steamormicrowave500g frozenbabygreenpeas
untiljusttender;drain.Blendorprocesspeas,½cupfirmly
packedfreshmintleaves,½cupcrèmefraîcheand 1
teaspoonlemonjuiceuntilalmostsmooth.Seasontotaste.
Scatter with small mint leaves, if you like.
Cheesy polenta
SERVES 4 PREP+ COOKTIME 30 MINUTES
Bring1 litre(4cups)stock,waterormilk(orhalfstockandhalf
milk)totheboilin a largedeepsaucepan.Add1 cuppolentain
a thinsteadystream,whiskinguntilmixturecomestotheboil.
Reduceheattolow;cook,stirring,witha long-handledwooden
spoonorwhisk,for 25 minutesoruntilsoftandthick.Stirin 30g
choppedbutterand½cupgratedparmesan;seasontotaste.
Loosen the consistency with a little extra milk, if preferred.
