AS EXPERIENCED EXPATRIATES, we know that food is one of the
major components of culture shock. Three times a day, or
perhaps even more, you are reminded that you are not in your
homeland. Yet with any luck you will discover tasty Chilean
delicacies that will be difficult to leave behind when your stay
is over. Take advantage of your stay to collect Chilean recipes
and try your hand at new and different meals.


SCHEDULE


Breakfast


The first meal of the day in Chile is desayuno or breakfast.
It is rather light fare—bread with jam or butter and milk for
the children and café con leche or tea for the adults. Café con
leche is half a cup of hot coffee with half a cup of hot milk,
sweetened to taste with sugar. Energy drinks such as Milo
are also common for children.


Lunch


Almuerzo or lunch is the big meal of the day in Chile, and it
is generally eaten between 1:00 and 2:00 pm. Traditionally,
two main dishes are served at lunch. The first dish may
be a salad of some kind. The second course is generally a
more substantial meat, fish or pasta dish with vegetables
as accompaniment, although there are several Chilean
vegetarian main dishes. In small towns and in some parts
of big cities, businesses close from 1:00 to 3:00 pm so
