Directions
- Before you do anything preheat the oven to 425 F.
- Toss the oil with ginger, cinnamon, cumin, paprika, salt and pepper, bell peppers, zucchini,
onion, fennel, apricots, and garlic in a large mixing bowl. - Spread the mix in a line up baking sheet. Cook it in the oven for 40 min while stirring it
from time to time. - Transfer the cooked veggies to another large mixing bowl. Add the chickpeas with basil
and stir them well. Place it aside to lose heat for a while. - Before you do anything else lower the oven heat to 375 F. place a phyllo sheet on a
working surface. Coat the upper side of it with some oil. - Top it with another piece phyllo sheet. Place 1 C. of the veggies mix in the middle of it.
Bring the left side to cover the filling.

5 -6 large garlic cloves, minced
1 1/2-2 tbsp extra-virgin olive oil
3/4 tsp ground ginger
3/4 tsp cinnamon
