College towns aren’t the kind of place
you’d expect to fi nd gourmet French
fare, yet Uppercrust has been serving up
photo-worthy pastries in Gator Country
for decades. University of Florida students
and members of the local community
fl ood in daily to grab a fl aky croissant in
the morning, enjoy savory pastries on their
lunch break, or snag a crispy loaf to have
with dinner. Specializing in laminated pastry,
Uppercrust has been a Gainesville staple
since 1981 when owner Jacqueline Dufty
founded it as a wholesale bakery before
turning it into a retail bakery shortly after
opening. Out of all the laminated pastry
Uppercrust specializes in, Jacqueline’s roses
are the most unique. Made of puff pastry
twisted into a rose shape and garnished
with a variety of toppings, they’re what the
bakery is best known for.
CROWD FAVORITE: opt for a taste
of something savory with their Artichoke
and Garlic Rose and then order the fresh
Peaches and Cream Rose as a dessert.

A block away from a breathtaking view of the San Juan Channel, Holly B’s Bakery is
the sweet intersection between easygoing island vibes and homey, artisanal pastry.
Holly Bower and her husband opened Holly B’s back in 1977 to live out their lifelong
dream of owning a neighborhood bakery. Holly B’s is truly the heart of the Lopez Island
community, as locals gather on the terrace to catch up with each other and dive into
the bakery’s crispy loaves of bread, showstopping pies and galettes packed with local
fruit, and pillowy butterhorns. In 2016, Holly passed the business on to current owner
Stephanie Smith, who’s still serving up the comforting recipes Holly built her dream on.
CROWD FAVORITE: Holly B’s signature cinnamon rolls, made with whole wheat
dough and stuff ed with sugar, cinnamon, raisins, and almonds. Tip from the locals: Holly
B’s is open only during the spring and summer, so be sure to plan your trip accordingly.
