THE CAKE
1 Preheat the oven to 180°C/Gas Mark
4 and grease and line 3 x 20cm (8in)
cake tins.
2 Put all the dry ingredients into a large
bowl or mixer and thoroughly combine.
3 In another bowl, beat the eggs until
smooth, then add the oil and buttermilk
and mix well. Slowly add the wet
ingredients to the dry, while still mixing.

4 Pour the mixture into the tins and bake in
the oven for 25-30 minutes, or until a
skewer comes out clean. Remove from
the oven and leave to cool on wire racks.

SALTED CARAMEL
1 Chop the butter into small cubes. Melt
the sugar in a saucepan over a low-
medium heat, stirring constantly.

360g (12oz) caster sugar
5 large free-range eggs
For the salted caramel
300g (10½oz) white
caster or
granulated sugar
135g (4½oz) salted butter
190ml (6½fl oz) double cream
2 tsp salt
For the chocolate buttercream icing
360g (12½oz) butter, at room
temperature
650g (1lb 4oz) icing sugar
150g (5½oz) Food Thoughts Dark 100%
Chocolate Cacao Melts
100g (3½oz) Food Thoughts Organic
Cocoa Powder
4-6 tbsp of buttermilk (only if your
icing is too thick)
For the decoration
350g (12oz) Food Thoughts Dark 70%
Chocolate Cacao Melts, divided:
150g (5½oz) for painting the body,
100g (3½oz) for piping/gluing,
100g (3½oz) for feathers
25g (1oz) Food Thoughts White 35%
Chocolate Cacao Melts, for white
highlights (optional)
red, white and gold sugarpaste,
for the chicken's features
edible red powder paint,
for feathers (optional)
Equipment
3 x 20cm (8in) round cake tins,
pastry brush, disposable piping
bags, 4 wooden skewers, secateurs,
pastry brush, cocktail sticks
