Cincinnati, Ohio, has its own definition of what chili can be.


Skyline and Gold Star are the most popular restaurant chains,


but the city is home to around 250 chili parlors, where you’ll


find a concoction of finely ground meat in a mild sauce spiced


with Worcestershire sauce, cinnamon, nutmeg, allspice and


cocoa powder. Spoon it over spaghetti—or hot dogs—and top


it your “way” with any combination of shredded cheddar,


onions and beans. You’ve got Cincinnati chili, a style beloved


by residents and expats of the Queen City.

Cincinnati Chili
In a Dutch oven, cook 1 lb.
ground beef, 1 lb. ground pork
and 4 chopped onions over
medium heat until meat is no
longer pink. Add 6 minced
garlic cloves; cook 1 minute.
Drain. Add two 16-oz. cans
kidney beans, one 28-oz. can
crushed tomatoes, ¹ ₄ cup
white vinegar, ¹ ₄ cup baking
cocoa, 2 Tbsp. chili powder,
2 Tbsp. Worcestershire sauce,
4 tsp. ground cinnamon, 3 tsp.
dried oregano, 2 tsp. ground
cumin, 2 tsp. allspice, 2 tsp.
hot pepper sauce, 3 bay leaves
and 1 tsp. sugar; bring to a boil.
Reduce heat; cover and simmer
until heated through, 1¹ ₂ hours.
Discard bay leaves. Serve with
spaghetti. Garnish with cheese,
tomatoes and green onions.
