ucking into a salad for a meal isn’t
for everyone, and getting the kids to
eat their daily servings of veggies
or even take one bite of the greens on
their plate can feel like a fight you’re never
going to win. Whether it’s you or the little
ones who aren’t in the mood for a plate of
vegetables, don’t fret. There are plenty
of creative ways to hide all kinds of produce
in meals that are so deliciously sneaky they
will hardly be noticed.
» Sick of eating the same old porridge
with fruit every morning? Switch things
up by grating a carrot and mixing in some
cinnamon and raisins for carrot-cake
inspired oats. Alternatively, forget the idea
that porridge has to be sweet and instead
make yourself a bowl of savoury oats with
sautéed veggies, an egg and a sprinkle of
parmesan cheese.
» Next time you’re whipping up a batch of
spaghetti Bolognese, add some finely diced
mushrooms, chopped red capsicum, grated
carrot, pumpkin or zucchini, and some
spinach. If you’re looking to incorporate
more plant-based meals into your week, you
could even switch half or all of the mince
for cooked lentils.

» Burger patties can be also be bulked up
with grated veg, or add a grilled portobello
mushroom to your stack.
» Whatever veg you’ve got in the fridge,
chances are they will work perfectly mixed
into a frittata, quiche, omelette or baked
into savoury muffins.
» Attempting to hide broccoli in
mac-n-cheese is pretty obvious, but one of
the latest foodie trends is making a thick,
cheesy, golden and nutritious sauce by
blending up steamed veggies as the base –
think starchy options like pumpkin, carrots,
sweet potato or potato.
» Have a Mexican night! Nachos,
enchiladas and quesadillas are all
wonderfully easy dishes to load up with
grated carrot, tomatoes, corn, onion,
spinach, finely chopped mushrooms
and black beans.
» In dishes like cookies and pancakes,
sweet potato or pumpkin purée can be used
as a clever binding ingredient with a nice
hint of sweetness.
» For a winning dessert, make a carrot
cake, sweet potato brownie, chocolate and
beetroot cake, avocado chocolate mousse or
even a pumpkin pie.
