1kg désirée potatoes, quartered
tbspoliveoil
1 cup (250ml) apple cider
tbspredwinevinegar^
1 tbsp Dijon mustard
½redcabbage shredded
2 onions, sliced

4 pork chops

1 Preheat the oven to 180°C fan-forced
and line a baking tray with baking paper.
2 Bring a large saucepan of water to
the boil and add the potatoes. Cook
for 10–15 minutes until tender, then
drain. Alternatively, put the potatoes
in a microwave-safe dish, cover and
microwave on high for 10 minutes.
3 Coat the potatoes with oil, salt and
pepper and arrange on the baking tray
in a single layer. Bake for 40–50 minutes,
turning occasionally, until crisp.

4 Meanwhile, combine the apple cider,
vinegar and mustard. Put the cabbage,
onion and apples in a casserole dish and
pour the cider mixture over. Cover with
a lid and bake for 30 minutes. Remove
the lid and bake for a further 10 minutes.
Add ½ cup (125 ml) of water if it begins
to dry out.
5 Ten minutes before the potatoes and
cabbage are ready, heat a frying pan over
medium heat. Season the pork chops
with salt and pepper and cook for 5–10
minutes, turning, until just cooked.
6 Serve the pork chops on top of the
braised cabbage and apples with crispy
potatoes on the side.
