1 Placeceleriacandpotatoina large
saucepan.Coverwith cold water. Bring
totheboilovermedium-highheat.
Boilfor 15 to 20 minutesoruntiltender.
2 Meanwhile,melthalfthebutter
ina fryingpanovermedium-high
heat.Addsprouts.Cook,tossing
occasionally,for5 minutesoruntil
justtender.Addhalfthemaple
syrup.Cookfor5 minutesoruntil
sproutmixtureis goldenandsticky.
3 Drainceleriacandpotatoandreturn
topan.Placepanoverlowheatfor
30 secondsoruntilexcessmoisture
evaporates.Removefromheat.Using
a potatomasher,mashpotatoand
celeriac. Add quark and remaining
butter.Seasonwithsaltandpepper.
Beatwitha wooden spoon until smooth
andcreamy.
4 Foldsproutmixturethroughmash.
Servedrizzledwithremainingmaplesyrup.
