HEALTHIER POTATO AND
SWEET POTATO BAKE
SERVES 6 (AS A SIDE)
PREP 20 MINUTES (PLUS STANDING)
COOK 1 HOUR 30 MINUTES
50g margarine spread
¼ cup plain flour
375ml can light and creamy
evaporated milk
500g Carisma potatoes, unpeeled,
cut into 2mm-thick slices
1kg orange sweet potato, unpeeled,
cut into 2mm-thick slices
2 tablespoons chopped fresh sage leaves
2 garlic cloves, crushed

¼ cup finely grated parmesan
2 tablespoons pepita and sunflower
seed mix

1 Preheat oven to 200°C/180°C fan-forced.
Grease a 6cm-deep, 20cm x 28cm oval
roasting pan.
2 Melt margarine in a saucepan over
medium-high heat. Add flour. Cook,
stirring, for 1 minute or until bubbling.
Gradually add milk, stirring until smooth
and combined. Cook, stirring constantly,
for 4 to 5 minutes or until mixture boils
and thickens. Season well with salt and
pepper. Pour into base of prepared dish.

3 Placepotato,sweetpotato,sageand
garlicina largebowl.Tosstocombine.
Arrangepotatoslices,standingupright,
in prepareddish,alternatingbetween
varieties.Spoonremaininggarlicandsage
mixturebetweenpotatoslices.Sprinkle
withparmesanandseedmix.Seasonwith
saltandpepper.
4 Coverwithbakingpaper,thenfoil.Bake
for 50 minutes.Uncover.Bakefora further
30 to 35 minutesoruntilgoldenand
tender.Standfor 10 minutes.Serve.
