white cake mix
2 cups ginger ale

(^2) ⁄ 3 cup oil
6 egg whites
2 tsp. strawberry
extract
As sorted concentrated
food colorings
4 (16 oz.) cans white
frosting
Decorating sugars,
sugar pearl sprinkles
and assorted sugar
flower decorations
Ribbon (optional)

TOTAL time: 3 hrs.

Heat oven to 350°F. Line 6 jumbo,
6 regular and 12 mini muffin cups
with cupcake liners. On low speed, beat
1 pkg. cake mix, 1 cup ginger ale,^1 ⁄ 3 cup
oil and 3 egg whites until blended, 30
sec.; on medium speed, beat 2 min. Stir
in 1 tsp. extract; tint as desired with food
coloring. Divide batter evenly among
liners. Bake until toothpick inserted into
centers comes out clean, 12–30 min. Let
cool 10 min. Transfer from pans to rack s ;
let cool completely before frosting.

While cupcakes cool, prepare cake:
Coat 2 (6"x3") round cake pans with
baking spray and flour. Prepare batter, as
directed at left, with remaining cake mix,
ginger a le, oil, egg whites and extract; tint
as desired. Divide between pans. Bake
until toothpick inserted into centers comes
out clean, 30–35 min. Let cool 15 min.
Transfer from pans to racks; let cool.

Reserve 2^1 ⁄ 4 cups frosting. Tint
remaining frosting as desired and
spread or pipe on cupcakes. Decorate
with sugars, pearls and flowers. Trim cake
layers to level. On cake stand, fill cake
layers with^2 ⁄ 3 cup of reserved frosting;
spread^1 ⁄ 2 cup frosting in thin coat all over
cake. Microwave remaining frosting in
15-sec. intervals, stirring, until slightly
thinned. Spread over cake. Decorate.
