Sandra’s one-bite wonders, whipped up from a cake mix,
can be customized with whatever extract flavor you prefer

These quick-fix treats are fun to assemble and fill, and they
make a great addition to your holiday dessert buffet

Neat Nests


(^) Heat oven to 375°F. Line
baking sheets with parchment
paper. On low speed, beat
cake mix, 1 cup water, egg
whites and oil until blended,
(^) Line large rimmed baking
sheet with wax paper. Place
candy melts in microwave-safe
bowl. Microwave in 15-sec.
intervals, stirring after each,
until melted and smooth. Stir
in cereal until all pieces are
evenly coated with candy.

Petite Petit Fours
Line rimmed baking sheets
with wax paper. Cut cake
into 48 squares. Transfer to
baking sheet. Cover; chill
Delicate little cakes are a cinch to ice and decorate with
melted ready-to-use frosting and candy flowers

at least 1 hr. Tint coconut
with coloring. Working in
batches, place cake on racks
over rimmed baking sheets.
In microwave-safe bowl,
microwave frosting in 15-sec.
intervals, stirring, until just
melted; stir in extract. Spoon
over squares until covered.
Press on coconut. Transfer to
separate baking sheets. Repeat
with remaining cake, frosting
and coconut, including frost-
ing drips on baking sheets.
Remelt frosting as needed.
Decorate with icing f lowers.
Wee Whoopies
Sift confectioners’ sugar
into medium bowl. Add
heavy cream and orange juice
and whisk together until com-
pletely smooth and of spread-
ing consistency. If not using
icing immediately, cover bowl
tightly with plastic wrap and
set aside at room temp.
(^) Dividing evenly, using back
of spoon or small spatula,
spread icing over cookies,
about 1 tsp. for each. Let icing
dry slightly, then gently press
1 mini fruit slice candy onto
each cookie.
(^) Transfer cookies to rack
set over piece of wax paper
to catch any drips. Let stand
until icing is set, about 1 hr.

frosting to pastry bag fitted
with small star tip; pipe onto

with remaining rounds, flat
sides down.
(^) Shape^1 ⁄ 4 -cupful mounds
of cereal mixture on wax
paper–lined baking sheet.
Make an indent in center of
each mound to resemble a
bird’s nest. Fill nest centers
with assorted Easter egg
candies and jelly beans. Let
stand until dry to the touch,
30 min.
(^) Easy variation: For a coco-
nutty treat, try replacing up
to 1 cup cereal with sweet-
ened flaked coconut and mix
in 1 ⁄ 4 tsp. coconut extract.
Citrus Kiss Cookies
Sandra likes to jazz up cookies with a little sweet-tart jolt of
orange icing—try it on chocolate sugar cookies too

41 ⁄ 2 cups sweetened flaked
coconut
Re d, green and yellow
liquid food colorings
41 ⁄ 2 cups vanilla frosting,
from 3 (16 oz.) cans
1 tsp. coconut or lemon
extract
48 mini icing flower
decorations
11 ⁄ 4 cups confectioners’
sugar
2 Tbs. heavy cream
1 Tbs. orange juice
24 (2^1 ⁄ 4 ") round plain sugar
cookies
24 assorted flavors mini
fruit slice candies
1 (15.25 oz.) pkg. white
cake mix
3 egg whites
(^1) ⁄ (^3) cup oil
2 tsp. extract of choice,
optional
Re d, green and yellow
liquid food colorings
2 cups vanilla frosting,
from 2 (16 oz.) cans
1 (12 oz.) pkg. bright
white candy melts
2 cups coarsely crushed
bite-size shredded
wheat cereal
