SPIRULINA GREEN CHICKEN SALAD


Serves: 2
Per serving (not including the rice or salad,
to serve): 315 calories, 16g fat
(3g sat fat), 40g protein, 2g fibre,
10g carbs (10g sugar), 2g salt


● 2 chicken breasts
● Sesame oil, to drizzle
● 3 spring onions, finely chopped
● 2 tbsp chopped fresh coriander
● 2 tbsp chopped fresh mint
● 2 tbsp dried fried onions
● 2 tbsp toasted sesame seeds
● Cooked brown rice or a mixed

green salad, to serve


For the dressing
● 4 tbsp freshly squeezed lime juice
● 1 tsp spirulina powder
● 1 tbsp fish sauce
● 1 tbsp finely chopped fresh ginger
● 2 tbsp sweet chilli sauce

1. Preheat the oven to 180°C/Gas Mark 4.
2. Drizzle the chicken breasts with sesame
oil, then wrap loosely in foil.
3. Put on a baking sheet and bake in the
preheated oven for 15-20 minutes, until
cooked through.
4. Cool slightly, then pull the meat apart

with your fingers to shred it and put in
a large mixing bowl.
5. Add the spring onions, fresh coriander,
fresh mint, dried fried onions and sesame
seeds to the chicken and toss together.
6. In a separate small bowl, whisk all the
dressing ingredients together.
7. Drizzle over the chicken salad and mix
together, then serve with either cooked
brown rice or a big green salad.
