BLEND TREND
As we’re always on the
lookout for practical
everyday healthy eating
suggestions, a new concept from
The Mushroom Bureau caught our
eye. Known as The Blend, it’s
simply about replacing some or all
of the meat in a dish with diced
mushrooms (choose vitamin D
enriched varieties for an extra
nutrition boost). Done
regularly, replacing meat
with veg will benefit your
health and the planet.
Blending works with any
vegetable, but according to
The Food Medic, Dr Hazel
Wallace, who is supporting the
Bring on The Blend campaign,
mushrooms are a particularly good
stand-in for meat as they offer a savoury, umami flavour and
similar texture. ‘Mushrooms blended in a food processor make
the perfect substitute for minced meat,’ says Hazel. ‘You can do
half meat and half mushroom in all your favourite minced meat
dishes, such as spaghetti bolognese, shepherd’s pie or chilli.’
