DR STUART FARRIMOND

Specializing in food science, Dr Stuart Farrimond is a science and health writer, presenter,
and communicator. He makes regular appearances on TV, radio, and at public events. He is a
trained medical doctor and teacher, and his writing appears in the national and international
press, including New Scientist, The Independent, the Daily Mail, and The Washington Post.
Dr Stuart presents a weekly radio science show, and his widely publicized food research has
addressed a broad range of topics. He is the author of DK’s The Science of Cooking.

Stuart oversaw all scientific aspects of the project, and wrote the Spice Science chapter and all
science-based content in the Spice Profiles chapter, including information on blending science and
getting the most flavour from spices.

Laura Nickoll is a writer and cookery editor based in Kent. She is a member of the Guild of
Food Writers and specializes in food and eating out for online and print restaurant guides. She
also edits cookbooks and has worked with many influential food writers and chefs, including
Mary Berry, Rachel Allen, Ed Smith, Marcus Wareing, Signe Johansen, and Rosie Birkett.

Laura wrote all the non-science content of the Spice Profiles chapter.

Jan Fullwood is a home economist who believes she has the
perfect job. Her varied career involves working for major food
brands, magazines including Good Housekeeping and delicious,
and books, notably for Mary Berry. Jan is constantly creating,
evaluating, and eating food, and always learning something
new; she lives with an overstuffed larder and her well-fed
family in Hertfordshire.

Jan wrote the World of Spice Further Recipes.

Roopa Gulati is a chef, food writer, and broadcaster, who worked
in India for two decades before returning to London in 2001.
As a Consultant Chef to the Taj hotel group, she honed her
expertise in regional cooking styles across South Asia. Back in
the UK, she was deputy editor for UKTV’s Good Food Channel,
and is now a freelancer, writing editorial features, recipes, and
restaurant reviews for leading food brands and magazines such
as BBC Good Food, Time Out, and delicious. Assignments include
cookery demonstrations at London’s Borough Market, scoping
Rick Stein’s BBC series in India, and joining the judge’s panel
for BBC Radio 4’s Food and Farming Awards.

Roopa wrote on South Asia in the World of Spice chapter, as well as the
recipes for Date and Tamarind Granita with Caramelized Pineapple
and Spiced Scallops with Saffron Beurre Blanc.

Thomas Howells is a London-based journalist. He works as a
freelance food editor and writer for Time Out London, and has
written for The Guardian, the Financial Times, and Wallpaper*.

Tom wrote on Europe in the World of Spice chapter.

Anna Kibbey is a food and drink writer and co-founder of food
copywriting agency 2Forks.co.uk. As a journalist and editor at
Square Meal, she reviewed restaurants for many years, and writes
food features, recipes, and reviews for Time Out, Food & Travel,
Men’s Health, and Mr & Mrs Smith. Anna is a keen cook, consumer,
and student of Middle Eastern food, particularly Lebanese and
Persian cuisine, and the owner of an encyclopaedic – and
ever-expanding – collection of spices. She most often reaches for
cumin, coriander seeds, cinnamon, and (always) chilli flakes.

Anna wrote on the Middle East in the World of Spice chapter, as well as
the recipes for Chicken and Aubergine Biryani with Seven-spice and
Ejjeh with Courgette, Feta, and Dill and Black Lime Harissa.

Sorrel Moseley-Williams is a British freelance journalist and
sommelier who has been based in Argentina since 2006. She
focuses on Latin American food, travel, and wine, and can be
found on the pages of Wine Enthusiast, Monocle, Condé Nast
Traveller, Travel + Leisure, Decanter, and Lugares in Spanish, among
other publications; she translated the Mirazur, Tegui and La
Cabrera books. She co-runs the pop-up wine bar “Come Wine
With Us” in Buenos Aires and can be found on
Instagram as @sorrelita.

Sorrel wrote on the Americas in the World of Spice chapter.

Freda Muyambo is a food writer with expertise in African
cuisine and a passion for sharing African culture through food.
She often describes herself as having a pan-African palate; born
and raised in Botswana to Ghanaian parents, she currently lives
in Nigeria, and has travelled extensively across the continent.
