(^1) / 2 cup(110g)caster sugar
2 tbsdarkrum
1 orange;1 tbsjuice, 2 tsp finely
gratedzest
400gripefigs(around10),
toughstemsremoved and halved
lengthways
2 eggs,separated
(^1) / 4 cup(35g)plainflour
15gcocoapowder
(^1) / 4 tspsaltflakes
1 tspvanillabeanpaste
100mldoublecream
40gdark(70%)chocolate,roughly
choppedinto1cmpieces
Creme fraiche, to serve
Preheattheovento170°C.
Add60gsugartoa small,oven-proof,
high-sidedsautepanwitha 14cmbase.
Placeona medium-highheatand
cook for 8-10 minutes, swirling the
pana fewtimes,untilthesugarhas
meltedandturneda dark,caramelcolour.
Addtherum–becareful,it willspit
andseizeupa little– andcookfor
another 30 seconds,stirringuntil
combinedandthick.Removefrom
theheat,stirintheorange juice and fig,
andsetasidetocool.
Puteggyolksintoa mediumbowlwith
25gsugar.Whiskuntilpaleandthick,
about3 minutes,thenaddflour,cocoa
powder,salt,vanilla,creamandorange
zestandwhiskuntilsmoothandthick.
Inanothermediumbowl,usea clean
whisktowhisktheeggwhiteswiththe
remaining25gsugaruntiltheyformstiff
peaks,about4-5minutes.Foldgently
intotheyolkbatter(donotovermix),then
pourthemixtureoverthefiginthesauté
pan(itshouldcoverthefigcompletely).
Sprinklealloverwiththechocolate
andbakefor 25 minutes,untilthebatter
risesandis cookedthrough.Remove
fromtheoven,divideamongbowls
andservehotwith some creme fraiche
alongside.
