Rolloutpastryona lightlyflouredwork
surfaceto3mm-thickroundandplaceon
atraylinedwithbakingpaper.Chill.
Choptoastedwalnutsfinelyorpulse
in a foodprocessor.Beatbutterand
sugarin a bowlwitha woodenspoonuntil
butteris pale.Addtheflour,chopped
walnuts and pinch of salt.
Preheatovento200°C.Spreadwalnut
mixtureonthepastrybase,leavinga 5cm
edge.Arrangefigsontop,cut-sideup.
Combinehoney,orangezestandvanilla
extractin a bowl.Drizzlemixtureoverthe
figs.Foldtheedgeofthepastryover
thefigsandbrushthecrustwitheggwash.
Sprinklethecrustwithdemerarasugarand
placetartona traylinedwithbakingpaper
ora preheatedbakingstone,andbakefor
50-60minutesuntilevenly golden. Serve
with cream alongside.
