PRAWNASIANOMELETTE
SERVES 4, AS A LIGHT MEAL


8 eggs


(^1) / 3 cup(80ml)fishsauce
(^1) / 2 cup(125ml)peanut oil
3 garliccloves
100mllimejuice
1 longredchilli,seedsremoved,finely
chopped,plusextra sliced to serve
2 tspcastersugar
20 mediumcookedkingprawns, peeled
(tailsintact),deveined
1 carrot,shredded (we used a julienne
peeler)
1 Lebanesecucumber,thinlysliced
Mint leaves and coriander, to serve
Preheatovento220°C.
Placeeggsandfishsaucein a bowl
andwhisktocombine.Heathalftheoil
in a largenon-stickfrypanoverhighheat.
Poureggmixtureintopanandcookfor
1-2minutesuntiltheedgesstarttoset.
Placepanin ovenandcookfor12-15
minutesuntillightlygolden on top and
eggis cookedthrough.
Meanwhile,placethegarlic,limejuice,
chilliandsugarandremaining^1 / 4 cup
(60ml)oilina smallfoodprocessor.
Whizuntilfinelychoppedandcombined.
Placeprawns,carrotandcucumber
in a bowlwiththedressing, season to taste
andtosstocombine.
Transferomelettetoa largeserving
plateandtopwithprawnsalad.Scatter
over mint and coriander to serve.

TOASTEDBREAD AND EGG

500gfreshgnocchi
200gunsaltedbutter,chopped
50gstalesourdoughcoarsebreadcrumbs
2 garliccloves,finelychopped
2 tbsfinelychoppedthymeleaves
Zestandjuiceof 1 lemon, plus extra zest
toserve
(^1) / 4 bunchflat-leafparsley,finelychopped,
1 smallbunch broccolini, trimmed,
halved
(^1) / 2 cup(125ml)good-quality vegetable or
chickenstock
Shavedparmesan and extra virgin olive
oil, to serve
Placeeggsina smallsaucepanofboiling
waterandcookfor 10 minutesforhard-
boiled.Drain,thencoolslightlyunder
coldrunningwater.Peel,thencoarsely
chopeggand transfer to a small bowl.
Setaside.
Meanwhile,cookgnocchiin a large
saucepanofboilingsaltedwater
accordingtopacketinstructions.Drain
wellandtransfertoa traylinedwithpaper
towelandstanduntilreadytouse.
Heatone-quarterofthebutterin
a largefrypanovermedium-highheat.
Whenthebutterbeginstofoam,add
breadcrumbs,garlicandthymeandcook,
tossing,for1-2minutesuntilbreadcrumbs
are toasted. Remove pan from heat and
stirin lemonzestandjuiceandparsley.
Seasontotaste and transfer to a plate.
Setaside.
Wipepancleanandreturntohighheat
withhalfoftheremainingbutter.Add
broccolini,andcook,tossingfrequently,
for2-3minutesuntiljustcooked.Scatter
overthegnocchiandcookuntilit is
goldenandbroccoliniis tender.Add
stockandremainingbutterandtossuntil
slightlythickened.Seasontotaste.Add
morestockif gnocchiis a littledry.
Scatterovertoastedbreadcrumbs,
choppedeggandshavedparmesan.
Drizzlewithextravirginoliveoiland
scatterwithextra lemon zest and parsley,
to serve.
