Pumpkin-Pepita Crunch
■Fold 1∕2 cup canned pure
pumpkin and 1∕2 tsp. pumpkin
pie spice into the ricotta
mixture. Garnish filled cannoli
with salted roasted pepitas.

Mochaccino Sundae
■Dip ends of cannoli shells in
melted chocolate; let set. Fold
1 tsp. unsweetened cocoa
powder and 1∕4 tsp. instant
espresso powder into the ricotta
mixture. Garnish filled cannoli
with chopped maraschino
cherries, patted dry.

Spiked Lemon


■Fold 2 tbsp. limoncello (lemon
liqueur) into the ricotta mixture.
Garnish filled cannoli with
lemon zest.
