Cheesy Ziti with
Broccoli Rabe
SERVES 4
1 lb. ziti • 1 lb. broccoli rabe,
chopped • 2 cups ricotta
- 3∕4 tsp. crushed red pepper
- 1 cup grated Parmesan
In a large pot of boiling
salted water, cook ziti until
1 minute shy of the package
directions, adding the
broccoli rabe during the
last 4 minutes of cooking.
Reserve about 1 mug of the
pasta cooking water; drain
the pasta. In the pasta
pot, mix the pasta, broccoli
rabe, ricotta, and crushed
red pepper. Stir in the
reserved cooking water
a quarter mug at a time
until sauce is creamy.
Top with Parmesan.

SAUCE
Whole-milk ricotta
(fresh-made,
if you can find it)
cooks well into
rich sauces.
Toss it with your
pasta and some
of its reserved
cooking water,
adding a
little at a time,
until you get it to
the creaminess
you like.
