- In large bowl, toss 1⁄2 small red onion (thinly
sliced) with 2 Tbsp lime juice and pinch each salt
and pepper, then toss with 1 mango and 1 small
seedless cucumber (both thinly sliced). Let sit,
tossing occasionally, at least 10 min. - Meanwhile, in small bowl, combine 1 Tbsp olive
oil, 1 Tbsp salt-free jerk seasoning and 1⁄4 tsp salt,
then rub all over 8 thin-cut boneless, skinless
chicken breasts (about 11⁄2 lbs). Cook on grill or
grill pan on medium until just cooked through,
2 to 4 min. per side.
- Fold 1⁄4 cup cilantro (roughly chopped)
into cucumber salad and serve with chicken
and lime wedges if desired.
