2 large potatoes (about 680g), peeled
and grated
2 tbsp snipped chives
4 large poached eggs
8 cooked pork or other sausages,
to serve


  1. Preheat waffle maker.

  2. Using 2 or 3 layers of paper towel,


firmly squeeze all excess liquid from
potato. Transfer to a medium bowl
along with chives, ½ tsp salt and
¼ tsp pepper.


  1. Spray waffle maker with nonstick
    cooking spray and add a 1,3cm layer
    of potatoes per waffle. Close waffle
    maker, pressing down firmly. Cook for
    12 minutes or until deep golden brown


and crisp. Keep warm on a baking
tray in a 105°C oven. Repeat with
remaining potato mixture. Serve with
poached eggs and sausages.
EACH SERVING About 860kJ,
9g protein, 6g fat (2g saturated),
29g carbohydrate, 2g fibre, 445mg
sodium.
