Cookie Pizza Party!
Any way you slice it, this ‘pie’ is a good time
waiting to happen
- Preheat oven to 180°C. Line a large baking tray with
foil and spray with nonstick cooking spray. - Take 470g refrigerated shop-bought sugar-
cookie dough and knead ¼ cup cake flour into it until
combined. With hands, roll dough into a ball, then
pat into a disc. Place disc in centre of baking tray. With
a rolling pin, roll dough into a 28cm round. Bake for
20 to 25 minutes or until edges are golden brown.
- While crust bakes, set out spreads and toppings.
(See above for suggested combinations.) While ‘pizza’
is still warm, use a pizza cutter or a large chef’s knife
to cut into 8 wedges. Top entire pie with your favourite
spread and topping, or treat as a palette, letting your
budding artists create a different flavour for each
wedge. Serves 8.
