Pastry Dough

Active Time 30 minutes Total Time
40 minutes, plus chilling Makes 50

1¼ cups cake flour
1 tbsp sugar
½ tsp salt
½ cup cold unsalted butter, cut up
1 tbsp white vinegar
1 tbsp ice-cold water, plus 1 to 2
tsp if necessary


  1. In a food processor, combine
    flour, sugar and salt. Add butter
    and pulse until mixture resembles
    coarse crumbs.

  2. Add vinegar and 1 tbsp ice-
    cold water, pulsing until dough is
    crumbly but holds together when
    squeezed. (If necessary, add
    remaining water, 1 tsp at a time.)
    Do not overmix.

  3. Transfer dough to a piece
    of clingwrap and shape into
    a 2,5cm-thick disc. Wrap tightly
    and refrigerate until firm (at least
    1 hour and up to 2 days).
