consciously, all of it—can be a powerful vehicle for change.
In recent years, we’ve seen this potential realized by female
chefs and restaurant workers helping propel the #MeToo
movement forward and speaking up for women’s rights more
broadly, as well as fast food workers leading the nation-
wide charge for a $15 minimum wage. In my mind, climate
change is the issue whose time has come to be mainstreamed
through food.
If enough people gradually and cumulatively vote with not
just their forks but their grocery baskets, we may very well
be headed for a revolution. One in which gastronomic citizenship
becomes the norm. A day when you no longer need a guide
to conscious eating—because it will be so second nature, we’ll
just call it... eating.
