Plant-based milks are an upgrade in planet protection.
Anything involving cows requires a ton of water because of
all the feed you have to grow. A stunning 98 percent of milk’s
water footprint stems from the cow’s diet, much of which is
alfalfa, a super water-intensive crop. The rest comes from cows
being greedy guzzlers, requiring 23 gallons of water per day
per cow, compared with our human hydration requirement of
1 gallon per day per person.
So, as you think about your morning coffee and which milk
to buy (if at all), consider that, all told, producing a 1-gallon jug
of regular milk takes about 2,000 gallons of water. Almond and
soy milks require roughly one-sixth and one-half that amount,
respectively (though exact numbers vary).
