MON MONDAY’S FUSS-FREE FISH

FISH CAKES WITH
WATERMELON SALSA
“These fish cakes really go a long way.
Time-saving tip: use Woolies’ microwaveable
baby potatoes to make a quick mash.”


Serves 4
EASY
Preparation: 20 minutes
Cooking: 15 minutes


Woolworths baby potatoes with
garlic-and herb-butter 700 g
Woolworths hot-smoked snoek
2 x 200 g packs
lemon 1, zested and juiced
Italian parsley 2 t chopped
sea salt and freshly ground black
pepper, to taste
flour 100 g
olive oil 2 T


For the watermelon salsa:
Woolworths prepared watermelon
1 x 350 g tub
red chillies 2, sliced
olive oil 1 T
limes 2, juiced
sea salt and freshly ground black
pepper, to taste


1 Microwave the potatoes according
to package instructions. Once cooked,
transfer to a large bowl and mash roughly.
Set aside. 2 Flake the snoek into small
pieces, removing all the fine bones. Mix
the snoek with the potatoes, lemon juice
and zest and parsley. Season to taste.


3 Shape the mixture into medium-sized
fish cakes and lightly dust with the flour
to make a crust. 4 Preheat a large pan and
add the olive oil. Lightly fry the fish cakes
until golden brown and crispy, about 3–5
minutes on each side. 5 To make the salsa,
cut the watermelon into chunky pieces
and place onto a serving dish. Scatter with
the chilli, then drizzle over the olive oil and
lime juice. Season and toss to coat. Serve
with the warm fish cakes.

STEAK DINNER
STEAK WITH SOUTHERN-
SPICED CAULIFLOWER
AND POMEGRANATE-
SPRING ONION YOGHURT
“I often make these Southern-fried veggies
on the weekend for snacks.”

Serves 4
EASY
Preparation: 15 minutes
Cooking: 20 minutes

Woolworths free-range sirloin
steak 600 g
sea salt and freshly ground black
pepper, to taste
olive oil, for frying
free-range eggs 2
Woolworths cauliflower florets
1 x 700 g packet
Woolworths Southern fry coating
1 x 125 g box
canola oil 1 cup
Woolworths double-thick plain
yoghurt 300 g
spring onions 4, thinly sliced
pomegranate rubies 175 g

(^1) Season the steaks. Heat a pan and drizzle
in some olive oil. Sear the steaks until
cooked to your liking. Set aside to rest.
2 Beat the eggs in a large bowl. Toss the
cauliflower in the egg until well coated.
Place the Southern fry coating onto a tray
and toss the cauliflower in the coating
until well coated. 3 Heat the canola oil in a
large saucepan. Deep-fry the cauliflower
in batches until golden and crispy. Drain
on kitchen paper. 4 To serve, spoon the
yoghurt onto a serving plate and scatter
over the spring onions and pomegranate
rubies. Slice the steak and place on the
yoghurt with the cauliflower.

Woolworths Easy to Cook duck
frikkadels 1 x 550 g pack
Woolworths hummus 1 x 180 g tub
haricot beans 1 x 400 g can, drained
and rinsed
Woolworths crimson microleaves,
for serving
celery 4 sticks with leaves, sliced
Woolworths ready-cooked beetroot
1 x 450 g tub
sea salt and freshly ground black
pepper, to taste
1 Heat the olive oil in a pan and fry
the frikkadels until golden and cooked
through, about 20 minutes. 2 To assemble,
spread the hummus on a platter and
top with the haricot beans, microleaves
and celery, then add the frikkadels and
beetroot. Drizzle with olive oil and season.
