the air. This is quite mad. What
are they up to?” Sure enough
Rupert sees that his pal is up at
the same height. “What, you
too!” he exclaims. “But do tell
me, how did we get here?”

ALAN’S TIP OF THE DAY: Sprinkle general fertiliser round trees, shrubs and perennials and along
the base of hedges. Use a specialist rose feed for roses. Brush off any feed that lands on
leaves and wash it out of crowns of perennials. Delay feeding if the weather is inclement.

Ideal as a starter or for a light lunch, this pâté recipes is straightforward to
make and can keep in the fridge for up to four days – or can be frozen for up to two months. Serves 12
INGREDIENTS

225g butter, divided
2 small onions
1 apple, peeled and cored
450g chicken livers
60ml brandy
2 tablespoons double cream
1 tsp lemon juice
11 /2 teaspoons salt
1 /4 teaspoon pepper

Chicken liver pâté

METHOD
1) Set aside 110g of
butter to soften at
room temperature.
2) Coarsely chop the
onion and apple in a
food processor.
3) Melt 30g of the
butter in a large frying
pan over medium heat.
Add the onion and
apple, and cook until
soft. Return contents
of the pan to the food
processor.
4) Wash the chicken
livers and pat dry. Cut in half and trim as
needed.
5) In the same frying pan, melt 50g of the
butter over high heat. Add the
chicken livers and cook quickly over high
heat, stirring, until browned and just
done inside. Reduce and add brandy.

6) Place the chicken
liver mixture in the
food processor with
the onion and apple.
Add cream and
process until very
smooth before placing
in a bowl and leaving
to cool.
7) Place reserved 110g
of butter in processor.
Add about 1/3 of liver
mixture, blend about
5 seconds. Repeat
twice till all of the
liver mixture is added. Add lemon juice, salt
and pepper and blend well. Taste and add
salt as needed.
8) Spoon the pâté into a dish or dishes.
Cover with the remaining butter, melted.
Chill in the fridge for several hours before
serving.
