When I ran my first café/sandwich bar I
made sure, by working like a maniac, that
every day – every single day, we had every
item on the menu. When we expanded our enterprise I would
slowly see that some of the shops didn’t have the full menu
available. Why not? It was simple for me so why couldn’t it be
simple for the manager of that particular shop? It all came down
to systems. Get the systems right, but make sure they are
focused on what the customer wants and what the customer
expects.
Walk your business several times daily with your “customer eyes”
on. Walk it at opening, mid-morning, pre-lunch, mid-lunch, post
lunch and mid-afternoon. Customer eyes. Get all staff to think
this way.
