Oven-Roasted Sweet Plantains

Roasting plantains instead of frying them makes them healthier and frees up space on your
stove so that you can tend to the other dishes you’re making.

Pineapple Pisco Sours

pisco is a grape brandy made in peru or Chile. traditionally made with lime juice, this drink
tastes similar to a margarita because it’s tart and sweet, but here, pineapple juice adds a fun
twist. a pisco sour is made frothy with an egg white.

2½ pounds (1,135 g) very ripe
plantains
1 tablespoon (15 ml) olive oil
2 tablespoons (24 g) sugar
salt to taste

Preheat the oven to 400 ̊F (200 ̊C, or gas mark 6). Line a baking sheet
with aluminum foil and set aside.
Peel the plantains and cut into 1-inch (2.5 cm)–thick slices. Place them
in a bowl and toss with the olive oil. Add the sugar and a sprinkle of salt,
and toss again.
Place in the center of the aluminum foil, bring the edges around, and
wrap the plantains in foil. Bake for 20 minutes.
Open the foil, spread the plantains out, and place under the broiler for 1
minute to lightly brown the edges. Serve warm.

Yield: 6 servings


Chef’s Tip
Like bananas, plantains are often green or yellow in the store. For optimum
sweetness, be sure to buy these about a week early so that they have a
chance to fully ripen and turn mostly black before you use them.

½ cup (120 ml) pisco
3 tablespoons (44 ml) pineapple
juice
1 tablespoon (15 ml) freshly
squeezed lime juice
2 tablespoons (16 g) powdered
sugar
1 egg white
3 dashes angostura bitters
