Countdown to the Party Timeline
2 daYs beFoRe:
Do the grocery shopping.
Plan the table setting, including linens, centerpieces, etc.
Have all the serving platters and serving utensils you will need ready for each dish.
1 daY beFoRe:
Make the coconut flan and chill.
Make the Lamb Meatballs in Tomato Sauce. Let cool and store tightly covered in the refrigerator.
These can easily be heated up right before serving.
Make the Almond Saffron Chicken. Let cool and store tightly covered in the refrigerator. This can
easily be heated up right before serving.
If you are using frozen shrimp for the Garlic Shrimp, defrost them in the refrigerator overnight.
Boil the potatoes for the Potato Tortilla, let cool, and store whole in the refrigerator.
Prepare the Smoked Paprika Aioli for the Potato Tortilla. Store tightly covered in the refrigerator
until ready to use.
Set the scene for your party. Arrange flowers, if using, and set the table for the party.

Make and chill the Red Sangria.
Slice the shrimp in half and put back into the refrigerator until ready to cook.
Prepare the brussels sprouts for the Roasted Brussels Sprouts with Chorizo by cleaning and slicing
them in half. Slice the chorizo and put both back in the refrigerator.
Make the Marinated Olives.
Make the Manchego with Membrillo and Honey.
Slice the boiled potatoes, and make the tortilla. Once the tortilla is done, cover with foil (this can
be served warm or at room temperature).

Put out the Marinated Olives and the Manchego with Membrillo and Honey.
Heat up the Lamb Meatballs in Tomato Sauce and the Almond Saffron Chicken in sauté pans or in
the oven at 375 ̊F (190 ̊C, or gas mark 5) until hot.
Toss the brussels sprouts, chorizo, oil, and salt together and roast in the oven.
Make the Blistered Shishito Peppers.
Make the Garlic Shrimp.
