Warm Ricotta Dip


with Sun-Dried Tomato Crackers


•Soy-free

This creamy and rich ricotta dip is begging for a crunchy cracker to scoop it up.
The answer? My simple-to-make sun-dried tomato crackers. They are absolutely
to die for, and grain-free, too!

fOr CraCkerS:
½ cup (55 g) sun-dried tomatoes in
olive oil, drained
2 cups (240 g) almond flour
½ cup (50 g) finely grated parmesan
cheese
¼ teaspoon salt

fOr dIp:
1 pound (454 g) ricotta cheese
½ cup (50 g) finely grated parmesan
cheese, divided
2 teaspoons lemon zest
2 cloves garlic, finely minced
¼ cup (60 ml) milk

Preheat the oven to 350 ̊F (180 ̊C, or gas mark 4).
To make the crackers: Place the sun-dried tomatoes into a food
processor and blend until very finely chopped. Place into a medium-size
mixing bowl. Add the almond flour, Parmesan cheese, and salt and knead
the mixture with your hands until it pulls together to form a ball.
Divide the dough in half. Place one half of the mixture on a sheet of
parchment paper and top with another sheet of parchment paper. Use a
rolling pin to roll the dough to about ⅛ inch (3 mm) thick. Remove the top
piece of parchment paper. Gently slide the bottom piece of parchment with
the dough onto a baking sheet. Use a sharp knife or a pizza cutter to cut
the dough into 18 squares.
Repeat the rolling process with the other half of the dough.
Bake both sheets of crackers for about 14 minutes, or until lightly
golden and crisp. Let cool before separating the crackers and serving.
To make the dip: Combine the ricotta cheese, Parmesan cheese, lemon
zest, garlic, and milk in a food processor or mini food processor and pulse
until creamy. Pour into a small baking dish and bake at 350 ̊F (180 ̊C, or
gas mark 4) for 20 minutes, or until hot.

Yield: 36 crackers


Chef’s Tip
Any hard cheese can be used to make the crackers. Experiment with
manchego, Asiago, or Pecorino Romano instead.
