Make-Your-Own Pizza Crusts


•Soy-free

Make these pizza crusts in advance, then let kids top them with sauce, cheese,
veggies, and cooked chicken, ham, or pepperoni.

¼ cup (60 ml) olive oil, divided
2 cups (480 g) cooked chickpeas
2 eggs
1 teaspoon salt
½ cup (50 g) grated parmesan
cheese
1 cup (120 g) liv’s flour blend
(page 15) or ½ cup (60 g)
cornstarch plus ¼ cup (30 g)
oat flour plus ¼ cup (30 g)
almond flour

In a food processor, combine 2 tablespoons (30 ml) of the olive oil,
chickpeas, eggs, salt, Parmesan cheese, and flour blend. Process until you
have a smooth dough that forms a ball. Divide into 6 even pieces and roll
each piece of dough into a ball.
Heat a 10-inch (25 cm) nonstick or cast-iron skillet over medium-high
heat. Place 1 teaspoon of the remaining olive oil in the pan. Spray an 8-inch
(20 cm) square of parchment paper with nonstick spray. Take 1 ball of pizza
dough and place in the hot pan. Place the greased parchment paper on
top of the dough and use a spatula to press the dough into about a 7-inch
(18 cm) circle. Remove the parchment paper, and cook for 4 to 5 minutes,
or until golden and crispy on the bottom, then use a spatula to flip the
crust and cook for another 4 to 5 minutes, until completely set and crispy.
Remove from the heat and set aside to cool. Repeat with the remaining
dough until you have 6 pizza crusts.
Let cool completely and store in large zipper-top bags in the refrigerator
for up to 2 days, or freeze for several months, until ready to use.
When ready to use, preheat the oven to 375 ̊F (190 ̊C, or gas mark 5).
Top each crust with the desired ingredients, then bake for 10 minutes, or
until the crust is crisp and the cheese, if using, is melted and bubbly.

Yield: 6 pizzas


Chef’s Tips



  • Place all of the different toppings on the table in little bowls and let the
    kids get creative!

  • Left plain and cut into wedges, these crusts make a great flatbread for
    scooping up hummus or other dips and spreads.
